Oatmeal Energy Balls

In my effort to avoid dairy, eggs, wheat, caffeine, chocolate, and sugar, I ironically found out that my son is allergic to dairy, eggs, wheat and peanuts. So I went from trying to not consume those things, to now I absolutely can not, because I am nursing him.  I’ve been pretty hungry, and wish I could eat something sweet like a cookie, so someone in an allergy support group recommended this recipe and it’s amazing. I added hemp and flax because those are great sources of protein, fiber and Omega 3’s…. also they’re great to help boost your milk supply if you’re nursing. 
These came out amazing. Everyone gobbled them up. And best of all, my toddler loved them and had no idea she was eating so many healthy things!!!
INGREDIENTS
  • 2 cups of oatmeal
  • 1 cup nut butter or seed butter alternative 
  • 1/2 cup maple syrup
  • 1/2 cup raisins
  • 1/2 cup carob chips
  • 1 tsp Cinnamon
  • 1 tsp vanilla 
  • 2 table spoons ground flax
  • 2 table spoons ground hemp
  • Pinch of sea salt (if the nut butter is salted, you don’t need the extra salt)
  • 1/4 cup coconut flakes

DIRECTIONS

  1. Combine all ingredients
  2. chill in refrigerate for 30 minutes
  3. Form into balls
